Rice and Beans!

Rice and beans is delicious, nutritious and good for your wallet. You can spice it up in the morning with chopped onion, garlic and cilantro. Mix it all together and place a fried egg on top. It’s even more exciting with some fried sweet plantains on the side. Hello heaven in the a.m.!

Rice and beans is the ultimate combination. You can serve it as a side or a main dish (throw in chunks of baked chicken, salsa, fresh grilled veggies and slice avocado for the side.) You could literally eat it for breakfast, lunch and dinner if you wanted to. I did it for a year and it is still a part of my diet several times a week. All over the world rice and beans is a constant, simple, diet staple because it is cheap, easy and filling.

It doesn’t have to be fattening and starchy with white rice. Try brown rice or mix it up and search for different varieties or rice. I almost always choose black beans and haven’t tired of them yet. But there are a plethora of beans to choose from. I am seriously obsessed with rice and beans because they are such a budget saver. You can throw rice and beans in tacos and wraps. The variety is definitely there. Below is a photo of me with my “gallo pinto,” a mixture of black beans and white rice stirred up with sauteed onions, garlic, and cilantro. This breakfast definitely gets you through the day without mindlessly snacking or getting too hungry before lunch. Awesome food for runners, too.

I have yet to make rice and beans and I’m becoming obsessed with frugal cooking so I need to give it a try. Do you buy canned beans or dried and soak them overnight? I love black beans and I always put them in wraps and tacos. Anyway love ya Steph and love your blog! This is my first time checking out your blog and good for you for starting one. It’s something I had been thinking about venturing into eventually as well since I’ve always liked to write and muse.

Hey, Rach! I would definitely read your blog! WordPress makes it really easy. I’m liking it. Thanks for checking this one out… need to post some more… I’ve been on vacation all week and running here and there and everywhere! I usually buy canned beans, but I have bought dried and soak them in some salty water for a few hours before cooking them.
